Api Models Reset

Reset the built model layer for a fresh rebuild WITHOUT unbinding the warehouse.

This replaces the old in-place “rebuild from scratch” build mode. Owner/admin only and gated by a typed confirmation {"confirm": "RESET", "drop_warehouse_objects": false}. When drop_warehouse_objects is true it also drops ONLY Platinur’s env output + validation namespaces (never the customer’s raw/source schemas).
